Holland America Line to Roll Out Updated Morimoto by Sea Menu
The revised dining lineup is scheduled to reach all 11 ships by mid-November, ahead of Chef Masaharu Morimoto’s 2027 Alaska sailing.

Holland America Line plans to introduce an updated Morimoto by Sea menu across its fleet this autumn. The revised selection, developed by the cruise line’s Global Fresh Fish Ambassador, Chef Masaharu Morimoto, is scheduled to debut aboard Nieuw Amsterdam in September and become available on all 11 ships by mid-November.
Morimoto by Sea operates as a dedicated restaurant on Nieuw Amsterdam and as a pop-up dining experience elsewhere in the fleet. New main courses will include Tan Tan Noodles served in red curry broth with miso-infused ground chicken; Miso Lamb Chop accompanied by kombu-braised daikon and gochujang-infused lamb jus; and Butter Poached Lobster Tail with warm yuzu butter.
Morimoto is also scheduled to sail aboard Nieuw Amsterdam on an eight-day round-trip Alaska cruise departing Vancouver on May 8, 2027. During the Culinary Ambassador sailing, he is expected to lead onboard activities centered on his culinary approach and fresh fish.
