Holland America Line refreshes Morimoto by Sea menu
The updated dishes are expected to reach all 11 ships by mid-November, beginning with Nieuw Amsterdam.

Holland America Line is rolling out a refreshed Morimoto by Sea menu across its fleet, starting with Nieuw Amsterdam. The dining concept operates as a standalone restaurant on Nieuw Amsterdam and as a pop-up experience aboard the line’s other ships.
New appetizers include Popcorn Shrimp served with Morimoto-style gochujang and Vegetable Wonton accompanied by an Asian sesame garlic chili sauce. Among the new entrees are Tan Tan Noodles featuring red curry broth and miso-infused ground chicken, along with Butter Poached Lobster Tail served with warm yuzu butter.
Chef Masaharu Morimoto is also scheduled to sail aboard Nieuw Amsterdam on an eight-day Alaska cruise departing roundtrip from Vancouver, Canada, on May 8, 2027. Holland America Line said special onboard experiences drawing on his culinary approach and inspirations are planned for the voyage. Morimoto serves as the cruise line’s Global Fresh Fish Ambassador.
